AGUACHILE

Here’s a few of my favorite things- lemon, salt, cucumbers and all things spicy! Which is probably why I can eat Aguachiles 3 times a week. Aguachiles translates to Agua= water and Chile= chile so it basically means spicy water. In all reality that’s what you make to marinate your shrimp. It’s such an easy recipe that really packs a KICK. It has yet to let me down so I’ve decided to share my recipe with you. I say MY RECIPE because this is how I like it.

INGREDIENTS:

  • 2 LBS SHIRMP
  • 4-6 LEMONS
  • 4-6 LIMES
  • 3 LARGE CUCUMBERS
  • 2 BUNCHES OF CILANTRO
  • 6 CLOVES GARLIC
  • 1-2 SERRANO CHILE
  • 1-2HABANERO CHILE
  • 1RED ONION
  • 1 AVOCADO
  • SALT TO TASTE

Add everything into the blender but the onion, 1 bunch of the cilantro and only add in 1 cucumber. Slice up rest and keep aside. You want to make sure you have enough lemon and lime juice to fill the blender half way.

Start with one serrano and one habanero then work your way up. You can always make it more spicy but, it can be painfully spicy if you’re not careful.

Clean, devein and butterfly the shrimp. I promise you will want to keep them nice and thin.

Once you have your juice blended up , add it to the shrimp and cucumber and toss and add salt! Top with red onion, cilantro and avocado. Place in fridge for 2 hours.
