G R E E N J U I C E 

Just like every other LA health nut I too jumped on board the “juicing” trend.  At first glance the green gunk looks unappealing and far from thirst quenching. I tried a few pre-bottled juices and non of them did the trick. But, then though to  myself … I just haven’t had the right one! Eventually I came across the “Greens 3” from Pressed Juice and I was surprisingly shocked by the refreshing sweet taste and kick of lemon.  On the down side I didn’t like paying an arm and a leg for a weeks worth of juice so my frugal brain figured there’s a better way. Lucky enough for me Pressed Juice keeps the ingredients on the front of the bottle. So with a little tweaking I came up my own version of green juice that you can tweak again and again and it will still be delicious. I mean so delicious my 1-year-old can’t get enough!

Here’s all you’ll need.

High Quality Juicer

Large Pitcher

  • 1 HEAD OF KALE
  • 2-3 LEMON
  • 1.5-2 INCHES OF GINGER
  • 1 HEAD OF LETTUCE
  • 4-5 GREEN APPLES (variety)
  • 1-2 STALKS OF CELERY
  • 3-4 CUCUMBER
  • 1-2 BUNCHES OF PARSLEY
  • 1 BUNCH OF SPINACH

 

My veggie and fruit count always varies due to the amount of juice I want to make that day, what’s on sale and the flavor I’m craving (if its more tart or sweet and bitter). I usually start with a base that consist of celery and cucumber since they are mainly water, then I gradually add the rest. In no particular order I just kind of mix and toss. I just leaving out the ginger and lemon. I do this because half way thru I clean out the pulp and set it aside to reuse it. I either toss it in the garden or add it to any cake, pancake or muffin batter. But, you won’t want to mix in any of the ginger or lemon pulp, it doesn’t taste so great.

I found this juicer on amazon and on sale. I don’t think its anything special all I know is it gets the job done. I’ve had it for about a year and I think it has another one to go before it dies on me. IMG_6611

I like to juice ahead because clean up can be a pain and time-consuming. I found these great mason jars at Target that are perfect for juice-on-the-go.

F I S H T A C O S 

My family’s request ALL summer long was for these dang fish tacos! The first night I made them I thought to myself that I just got lucky because they came out so delicious! Then the second batch was surprisingly just as good, and I have to admit I think I perfected them the third time around.  Since they are too easy and delicious not to share here you go.

  • 4-5 filet of white fish (halibut,dover sole)
  • 1/2 head cabbage
  • 2-3 lime
  • 1 large tomato
  • 1 cucumber
  • cilantro
  • 1/2 cup mayo
  • Sriracha
  • 1/2 flour
  • small flour tortillas

 

 

In a large skillet add oil of your choice and set it on high. I always like to burn the outside of my fish, I love the texture. This is also why i coat my fish in flour and seasonings.

Toss some spices and any go to seasonings you have in you pantry into the flour and mix.  Toss in the fish and coat completely. Add the fish to the hot oil and cook about 5-6 min each side depending on the fish. Set fish aside on paper towel while we make my favorite Sriracha Slaw!

Shred cabbage, add mayo, lime and Sriracha and toss. Salt and pepper to taste.

Chop and garnish with tomato, cucumber and cilantro.
